Egg & Garlicky Kale Breakfast Sammy

I came up with this egg & kale breakfast sammy idea when I was hangry. 

Luckily, I had some garlicky kale, jammy eggs, pre-cooked bacon, and grated parmesan in the fridge — just waiting for me to throw these flavors together.

While a bacon, egg, and cheese isn’t the healthiest breakfast to eat every day of the week (or is it???), it’s perfect for those mornings when you just need to throw something down your gullet before racing out the door.

When I lived in NYC, the bacon egg and cheese (BEC) was the staple hangover cure. It’s fast, fatty, and carby. Plus, you could always find one in every corner bodega in the city.

These little fat bombs are so popular, everyone has their favorite spot to buy them. And if you couldn’t roll out of bed for long enough to find your favorite? There was always one that would do at your corner bodega.

This BEC comes together in just a few minutes, so you can spend less time in the kitchen and more time back under the covers. 

 

Egg & Kale Breakfast Sammy Ingredients

This recipe is so easy to make, but it’s super impressive. It’s super simple and takes less than 10 minutes throw these 9 ingredients together: 

  • Brioche bun
  • 1 egg (per serving)
  • Garlicky kale
  • Grated parmesan
  • 1 slice bacon (per serving, optional)

Seriously, just heat and serve the ingredients. It’s that easy. Five minute prep may even be a bit of an overstatement here. Just make sure you top your toasted bread with the shredded cheese to allow the cheese to get a little melty before adding your cold or room-temp ingredients. 

 

5-Minute Breakfast Sammy

This weekday morning fave takes just a few minutes to throw together.

1. Toast a brioche bun

2. Top with shredded parmesan cheese, a slice of pre-cooked bacon (if using), and a spoonful of garlicky kale.

3. Fry, poach, or soft-boil an egg and place shelled egg on the sandwich. Save even more time by cooking and slicing a few eggs over the weekend.

Serve solo or with ketchup, sriracha, or garlic chili sauce.

To Dairy or Not to Dairy

If you’re dairy-free, please feel free to use a dairy parm substitute — or leave the dairy out altogether. 

Add Meat (if you please)

If you want to add more salty flavor to this dish, you can add a slice of bacon. If you’re not a meat eater, tofu bacon tastes great on this sammy, too.

Prep Time: 5 min.

Ingredients
  • Brioche bun
  • 1 egg (per serving)
  • Garlicky kale
  • Grated parmesan (or dairy-free grated cheese)
  • 1 slice bacon (per serving, optional)

 

Instructions

Do I need to explain how to make this? OK, here we go:

1. Toast ya buns.

2. Sprinkle parmesan or non-dairy cheese on the toasty-warm bun.

3. Top with garlicky kale and an egg.

 

Optional Add-Ons

  • Bacon or pancetta
  • Any salty grated cheese
  • Sliced tomatoes
  • Horseradish mayo
  • Ketchup
  • Steamed spinach
  • Roasted garlic
